"When three young men talk about the past, they call themselves names: the black sheep. The bad one. A headache. A wild card. Incarcerated before age 18, the Dallas County Juvenile Department labeled them “throwaways.” Their course was marked for a life of crime. So Chef Chad Houser offered them jobs. Now, about 75 young men who served jail time for non-violent crimes are working a roughly yearlong internship at Café Momentum, a nonprofit restaurant and training facility in downtown Dallas.
